Easter Bunny Cupcakes (Recipe & Video)

EASTER BUNNY CUPCAKES
Cupcake Mixture
2 Eggs
Thickened/whipping cream
1 teaspoon Vanilla extract
3/4 cup caster/superfine sugar
1 cup self-raising flour
Icing & Bunny Ears

Store bought vanilla icing spread or make your own
200g white chocolate for melting
Makes 12 cupcakes.
Method
Preheat your oven to 160C fan forced.
Crack eggs into an 250ml measuring cup then fill to the top with thickened/whipping cream. Pour into a mixing bowl and beat with electric mixer for one minute. Add vanilla extract, caster/superfine sugar and sifted self-raising flour and beat for 3 minutes.
Before filling with mixture, draw a bunny face on each muffin case with a black marker. Place mixture into baking cups and bake on a flat tray at 160C until golden brown, approximately 15-20 minutes. Place on a cooling tray once baked.
Whilst the cupcakes are baking, melt the white chocolate over a bowl of simmering hot water or gentling in the microwave according to the packet instructions. Remove from the heat and allow to cool slightly. Place in a piping bag with small narrow piping nozzle. Using the bunny ear template, place tracing paper over the sheet and trace the bunny ears to fill in with chocolate. Place in the fridge for 15 minutes to harden. Decorate the cupcakes with icing mixture and top with sprinkles, inserting the bunny ears before serving.
